Spiced Apple Pie Cupcakes

The third and final installment, an American classic adapted to the modern trend of cupcakes. This cupcake is much more “holiday-spiced” than your average Apple Pie, making it a perfect addition to your Thanksgiving table.

The base is comprised of a light apple cake (now with Real Apple™!) and topped with a light vanilla buttercream and a spiced apple compote.

Ingredients:

Apple Cupcakes

  • 1 1/2 c flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 3/4 c sugar
  • 2 eggs
  • 1 1/2 sticks butter, melted
  • 2 tsp vanilla
  • 3/4 c milk
  • 1 large apple, diced

Vanilla Buttercream

  • 1 c shortening
  • 1/2 c butter, softened
  • 4 1/2 c powdered sugar
  • 1/8 tsp salt
  • 1 tbs vanilla
  • 2-4 tbs heavy cream

Apple Compote

  • 1 large apple, diced
  • 3 tbs sugar
  • 1 tbs lemon juice
  • 1/2 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp cloves
  • 2 tbs butter
  • 2 tsp flour

Instructions:

Apple Compote:

  1. In a medium bowl, mix apple, sugar, lemon juice, and spices.
  2. In skillet, melt butter, and add the apples, stirring frequently, until the apples are tender.
  3. Add flour, and stir the liquid thickens.
  4. Remove from heat, and let the filling cool completely.

Apple Cupcakes:

  1. Preheat oven to 350 F.
  2. In medium bowl, combine dry ingredients and spices.
  3. In mixer, beat sugar and eggs until creamy, add butter and vanilla and mix.
  4. Alternate adding dry mixture and milk, mix until well incorporated.
  5. Add in diced apples to your preference.
  6. Bake 15-18 minutes or until toothpick inserted in center comes out clean.

Vanilla Buttercream:

  1. Beat butter and shortening on med-high. Add sugar a little at a time, alternating with tbs of cream, scraping the bowl between. Once fully incorporated, mix on high 10 minutes or until light and fluffy.
