Candy Corn Cupcakes

I love Halloween. It is my favorite holiday of the year, and not because I love costumes and a new identity for a night. I love the ~spooky vibes~. Marissa and I are hosting a Halloween Party this year for our like-minded adult friends who all have to work early the morning after Halloween. In a very fitting turn of events, I have volunteered to do all the baking, and Marissa is providing snacks, great photo-ops, and best of all, DRY ICE (to allow for extra spooky drinks).

I made these delicious Candy Corn (mini) Cupcakes as a festive and easy snack for our guests who mainly will be consuming alcohol. Just your an extra sweet cake, dyed to match a candy corn (yellow bottom, orange middle) and some vanilla buttercream for the white tip. They went fast, rightfully so, because you can pop about three of these into your mouth without noticing!

Ingredients:

Candy Corn Cupcakes:

  • 1/2 c butter, melted
  • 1 1/4 c sugar
  • 3 eggs
  • 1 tbs vanilla
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 c buttermilk
  • yellow food coloring
  • red food coloring

Vanilla Buttercream:

  • 1 c shortening
  • 1/2 c butter, softened
  • 4 1/2 c powdered sugar
  • 1/8 tsp salt
  • 1 tbs vanilla
  • 2-4 tbs heavy cream
  • candy corn for topping

Instructions:

Candy Corn Cupcakes:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix melted butter and sugar until thick. Add eggs until incorporated. Add in vanilla.
  3. In separate bowl, combine dry ingredients.
  4. Alternate adding dry mixture and buttermilk to the butter mixture. Blend until well mixed.
  5. Split batter in half and dye half orange and the other half yellow. Pour the yellow batter into the liners first, following with the orange.
  6. Bake for 18-21 minutes until a toothpick comes out clean. Let cupcakes cool completely before frosting.

Vanilla Buttercream:

  1. Beat butter and shortening on med-high. Add sugar a little at a time, alternating with tbs of cream, scraping the bowl between. Once fully incorporated, mix on high 10 minutes or until light and fluffy.
