Strawberries n’ Cream Cupcakes

 

Strawberry Cupcakes

  • 1/3 c strawberries, pureed
  • 1 1/2 c flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 c milk
  • 1 stick butter, softened
  • 1 c sugar
  • 1 egg
  • 2 egg whites
  • 1 tsp vanilla

Strawberry Cream Cheese Buttercream

  • 1/4 c strawberries, pureed
  • ½ c vegetable shortening
  • 1 stick cream cheese, softened
  • 3 c confectioners’ sugar
  • ½ tsp vanilla

Instructions

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix flour, baking powder and salt.
  3. In mixing bowl, mix butter and sugar until well blended. Add eggs one at a time, add vanilla.
  4. In a small bowl, mix milk and strawberry puree.
  5. Alternate adding dry mixture and milk mixture to butter. Mix until well incorporated.
  6. Bake for 23-25 minutes or until toothpick inserted in center comes out clean.

Strawberry Cream Cheese Buttercream

In mixer, blend Crisco and cream cheese until fluffy. Slowly add confectioners’ sugar until well mixed. Add vanilla and strawberries. If icing is too dense, add small amounts of cream. If too runny, add more confectioners’ sugar.
